All the Restaurants listed on the guide are there either because they have a gluten free restaurant menu, or the restaurant has been recommended as a restaurant that can serve gluten free meals.  Unfortunately, you can never be certain that the food you are served is gluten free.  Restaurants change, a restaurant that served you a gluten free meal before may have new management or staff, or the staff may not have been well trained.  If this is your first trip to a restaurant it is always a good idea to call ahead to be certain the restaurant can serve you a gluten free meal.  It is better to find out before you eat, if your meal will be safe.
